Ingredients

  • 3 pounds chicken breast
  • 6 eggs
  • 1/2 cup and 3 Tbsp* cornstarch
  • 3/4 cup flour
  • 2 cups orange juice
  • 3/4 cup brown sugar
  • 3 Tbsp white vinegar
  • 3 Tbsp soy sauce
  • 1/2 tsp ground ginger
  • 1/2 tsp garlic
  • 1 tsp red chili flakes
  • orange zest
  • oil for frying
  • *Mix 3 Tbsp cornstarch with 3 Tbsp cold water to create a slurry, add slurry to sauce to thicken

Instructions

  1. Step 1- Cut chicken into bite-sized chunks
  2. Step 2- Whisk eggs, set up two bowls (one for the eggs and one with a mixture of 1/2 cup cornstarch and 3/4 cup flour)
  3. Step 3- Fry chicken until golden brown on both sides
  4. Step 4- Set fried chicken aside to dry and make sauce
  5. Step 5- Combine orange juice, brown sugar, and vinegar in a pot over medium heat, mix well
  6. Step 6- Add slurry to mixture, bring to gentle boil, and mix for 1-2 to minutes, stirring constantly
  7. Step 7- Add other ingredients to sauce, adjusting for taste while continuing to stir, to prevent burning
  8. Step 8- Remove sauce from heat, bathe chicken in sauce
  9. Step 9- Serve over rice and vegetables
