These potstickers are filled with a hearty, savory mix of seasoned ground beef and tender bok choy, brightened by aromatic layers of fresh ginger, garlic, green onions, and fragrant sesame oil. The result is a juicy, satisfying center encased in a perfectly pan-fried wrapper—crisp on the bottom, soft on top. They are easy to make in large batches and freeze well for future emergencies, offering a delightful and distinctly savory bite that pairs perfectly with a simple soy-dipping sauce.

Ingredients
- 3 pounds ground beef
- wonton wrappers for assembly*
- 3 eggs
- 2 heads bok choy
- 2 green onions
- 3 garlic cloves
- 5 tsp fresh ginger
- 3 tsp sesame oil
- 1 Tbsp salt
- 2 tsp black pepper
- can of diced water chestnuts (optional)
- *usually use nasoya wonton wraps
- --Dipping Sauce--
- 1 cup soy sauce
- 4 Tbsp rice vinegar
- 3 tsp sesame oil
- 2 tsp Korean chili powder
- 2 cloves garlic
- 1 green onion
- 2 tsp sesame seeds
Instructions
- Step 1- Heat oil in pan to medium heat, brown meat, drain, and season
- Step 2- Dice bok choy, green onions, garlic, and fresh ginger, throw in pan with beef
- Step 3- After meat and vegetable mixture is fully cooked, remove from heat
- Step 4- Beat eggs and brush individual wonton wrappers with eggs
- Step 5- Fill wrappers with meat and vegetable mixture, close wontons, and bake at 350F or fry until golden brown
- Step 6- To make dipping sauce, combine all ingredients in a saucepan, lightly heat, and serve with wontons
