Ingredients

  • 1 Tbsp olive oil
  • 2 pounds Italian meatballs
  • 1 large package of cheese tortellini pasta
  • 1 small onion, finely chopped
  • 1 1/2 cups celery, chopped
  • 3 Tbsp minced garlic
  • 6 cups beef broth
  • 1 15 oz can crushed tomatoes
  • 1 15 oz can tomato sauce
  • 3 Tbsp Italian seasoning
  • 1/2 package of chopped frozen spinach (thawed and squeezed dry)
  • 1 tsp salt
  • 1 tsp pepper
  • Parmesan cheese to top

Instructions

  1. Step 1- Heat oil in large pot over medium heat
  2. Step 2- Saute onion, celery, and garlic until soft
  3. Step 3- Add tomatoes, sauce, broth, seasoning, and meatballs, bring to boil, then lower to a simmer for 5 minutes
  4. Step 4- Add tortellini and spinach, cook 5 minutes
  5. Step 5- Garnish with parmesan cheese and serve
