Ingredients
- --Chicken Seasoning--
- 3 pounds of chicken breast
- 3 Tbsp plain Greek yogurt
- 1 Tbsp minced garlic
- 1 Tbsp paprika
- 1 Tbsp garlic powder
- 1 1/2 tsp cumin
- 1 1/2 tsp turmeric
- 1 1/2 tsp oregano
- 1 1/2 tsp chili flakes
- 2 tsp lemon juice
- 1 tsp salt
- 1 tsp pepper
- --Rice Mix--
- 1 1/2 Tbsp olive oil
- 3 cups rice
- 5 cups water
- 3/4 of bouillon cube
- 3/4 tsp turmeric
- 3/4 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- --Sauce--
- 3/4 cup plain Greek yogurt
- 3/4 cup mayonnaise
- 1 Tbsp minced garlic
- 3 Tbsp fresh cilantro
- 6 Tbsp lemon juice
- 3/4 tsp salt
Instructions
- Step 1- Mix chicken seasoning together in bowl
- Step 2- Cut chicken into strips, let marinate in seasoning for 1-2 hours
- Step 3- Boil water, add bouillon cube, rice and other spices
- Step 4- Boil rice for 1 minute, stirring occasionally, then let simmer for 20 minutes (or until rice is cooked)
- Step 5- Mix ingredients for sauce to taste
- Step 6- Take marinated chicken and cook in skillet over medium heat 15 minutes
- Step 7- Pull chicken from heat and serve over rice, drizzle sauce on top
- Step 8- Garnish with freshly chopped cilantro
