Ingredients
- 4 14 oz cans black beans
- 2 medium yellow/white onions
- 2 cups frozen corn
- 2 zucchinis, cubed
- 2 Tbsp olive oil
- 1 Tbsp onion powder
- 1 Tbsp cumin
- 1 Tbsp paprika
- 2 tsp chili powder
- 2 tsp garlic powder
- 2 tsp oregano
- 1 1/2 tsp salt
- 20 tortillas
- 4 cups cheese
Instructions
- Step 1- In a large pan over medium heat, saute onions
- Step 2- Add zucchini and saute an additional 2 minutes
- Step 3- Remove from heat and set aside
- Step 4- Mash 3 cans of beans, mix with onion and zucchini
- Step 5- Put bean mixture on head, add other can of beans and spices
- Step 6- Add corn, heat until warm
- Step 7- Brown 10 tortillas
- Step 8- Scoop bean mixture onto browned tortillas, add cheese, top with second tortilla and flip
- Step 9- Brown second tortilla and remove from heat once cheese is melted
