Ingredients

  • 4 14 oz cans black beans
  • 2 medium yellow/white onions
  • 2 cups frozen corn
  • 2 zucchinis, cubed
  • 2 Tbsp olive oil
  • 1 Tbsp onion powder
  • 1 Tbsp cumin
  • 1 Tbsp paprika
  • 2 tsp chili powder
  • 2 tsp garlic powder
  • 2 tsp oregano
  • 1 1/2 tsp salt
  • 20 tortillas
  • 4 cups cheese

Instructions

  1. Step 1- In a large pan over medium heat, saute onions
  2. Step 2- Add zucchini and saute an additional 2 minutes
  3. Step 3- Remove from heat and set aside
  4. Step 4- Mash 3 cans of beans, mix with onion and zucchini
  5. Step 5- Put bean mixture on head, add other can of beans and spices
  6. Step 6- Add corn, heat until warm
  7. Step 7- Brown 10 tortillas
  8. Step 8- Scoop bean mixture onto browned tortillas, add cheese, top with second tortilla and flip
  9. Step 9- Brown second tortilla and remove from heat once cheese is melted
