Crème Brûlée
Description
A cool, light, and smooth dessert that will refresh the entire crew after a good worker, or a high volume day. This crème brûlée focuses on a sweet and silky custard that starts with a delightful crunch of caramelized sugar with every bite. Dress it up with berries and whipped cream or serve it straight from the fridge, this will be an instant hit with the guys and gals at the station.

Ingredients
- 3 cups heavy cream
- 8 large egg yolks
- 1/2 cup sugar
- 2 tsp vanilla paste
- Dash of salt
Instructions
- Step 1- Whip egg yolks and sugar in a separate bowl until smooth, set aside.
- Step 2- In a medium sized pot whisk heavy cream, vanilla paste, and salt on medium-low heat
- Step 3- After bringing cream mixture to a gentle simmer, slowly add egg yolk mixture to prevent curdling
- Step 4- Preheat oven to 300F
- Step 5- Once entire mixture is combined, distribute equally into 8 ramekins, place ramekins into large baking dish, and add water to the baking dish until 3/4 up the side of the ramekins
- Step 6- Bake 30-40 minutes, until sides are firm but middle of custard mix has slight wiggle
- Step 7- Remove crème brûlée from baking dish and place in fridge, let cool 4 hours
- Step 8- Top with granulated sugar, caramelize with torch, top with berries or whipped cream
